Le bleuet de type sauvage, Vaccinium angustifolium, est connu pour ętre une excellente source de composés phénoliques antioxydants, tels que les anthocyanines, flavonols et acides phénoliques. De plus, la surface de ce fruit constitue un habitat naturel pour de nombreux micro-organismes. L'intéręt des présents travaux est de déterminer les effets de la fermentation du bleuet par une souche bactérienne isolée de sa microflore sur le contenu en composés phénoliques et la capacité antioxydante. Cette augmentation de la capacité antioxydante est attribuée non seulement ŕ une augmentation de la concentration en composés phénoliques, mais également ŕ un changement du profil de composés phénoliques, tel que démontré par la production d'acide gallique et d'un nouveau composé de type phénolique ou phénylpropanoďque. En soi, la fermentation des petits fruits pourrait contribuer au développement de nouveaux nutraceutiques ayant une forte activité antioxydante. De plus, une telle transformation du bleuet par la fermentation peut ętre trčs bénéfique pour le systčme digestif si la bactérie impliquée présente des effets probiotiques.
