It does that by nabbing calories before they can be absorbed and stored as fat. Scientists have also reported that antioxidants fight obesity by giving our bodies the energy needed to burn fat more efficiently. These actions promote preventive health by making it harder to gain weight and lowering our risk of obesity.

  • Deep-fried fatty foods can form oxidized lipids that can damage cells and the lining of blood vessels - opening the door to heart disease. Antioxidants can counteract that effect. Scientists have reported that antioxidants fight heart disease by inhibiting the formation of oxidized lipids - thus promoting preventive health by inhibiting damage to cells and to the lining of blood vessels and thus lowering our risk of heart disease.

  • High-fat foods raise blood levels of fat and cholesterol, which weakens our immune system. Excess fat and cholesterol interfere with our immune system cells' ability to fight diseases by impairing the ability of red blood cells to deliver oxygen to immune system tissues that depend on a good supply of oxygen and nutrients to fight diseases and keep us healthy. Fiber and vitamin C can counteract that effect. Scientists have reported that fiber and vitamin C fight chronic diseases by promoting healthy blood levels of fat and cholesterol - thus strengthening our immune system and promoting preventive health by enabling red blood cells to deliver oxygen to immune system tissues.

  • Some of our favorite animal protein foods such as steaks, burgers and ribs can open the door to heart disease and stroke by increasing our body's production of the amino acid homocysteine. Excess homocysteine in the bloodstream opens the door to heart disease and stroke by injuring blood vessels, which leads to the buildup of plaque (scar tissue) and narrowing of carotid arteries. The B vitamins folic acid and vitamins B6 and B12 can counteract that effect. Scientists have reported that folic acid and vitamins B6 and B12 fight heart disease and stroke by breaking down excess homocysteine into harmless compounds - promoting preventive health by inhibiting injury to blood vessels and narrowing of carotid arteries.
