"Perché sono vegetariano" propone una selezione originale di saggi brevi, lettere, diari e articoli di Lev Tolstoj. Poco nota all'interno della biografia di Tolstoj č infatti la sua "conversione" al vegetarismo, che lo scrittore russo espliciterŕ ne "Il primo gradino", un saggio breve che Piano B ripropone dopo molti anni di assenza dalle librerie italiane. Incisivo e attualissimo, puň essere ritenuto oggi uno dei testi fondamentali del moderno movimento vegetariano. Oltre a "Il primo gradino", sono qui riproposte una serie di scritti brevi su temi affini e intimamente legati a quelli del vegetarismo: rifiuto della caccia, nonviolenza, rispetto per tutte le creature viventi. Lo stesso Gandhi fu fortemente influenzato da Tolstoj. Il volume č arricchito da alcune "lettere vegetariane" inedite in Italia e che Tolstoj inviava ad amici, giornalisti e parenti e in cui discuteva della sua scelta. In appendice al volume sono presenti anche il racconto breve "Il sangue", di Michail Arcybasev, mai tradotto in Italia e che Tolstoj consigliava di far leggere a tutti coloro che rifiutavano il regime vegetariano, e un breve articolo del segretario di Tolstoj, Valentin Bulgakov, intitolato "Tolstoj e il vegetarianesimo", in cui compare un ritratto inedito dello scrittore russo.
