Why TASTE? Throughout the duration of my ongoing career in the wine industry, I have been asked countless questions regarding wine; however, one of the most common questions is how to taste wine. The creation of TASTE has origins in a desire to bring more understanding and clarity to consumers regarding wine production, food pairing, and the fundamental importance of using the senses. I believe wine cannot be analyzed simply as a beverage. No, wine is connected with many elements, whether something as simple as enjoyment in our daily lives, or something as deep as our human history. It has been an active protagonist since the arrival of the Pilgrims and Christopher Columbus to the Americas. Wine is still in contemporary times a welcome guest in the lives and tables of an increasing number of people around the world. Wine is a seductive beverage and because of this element of seduction, it cannot be seen simply as just another beverage. The seduction I refer to is related to the intimate and fundamental relationship human beings have with food and beverage, whether it is wine or beer, coffee or tea, spirits or liquors, or food. In my opinion, eating and drinking are one of the most important ways we pleasure our senses and nurture our souls. Wine, like food, is connected with agriculture, biology, chemistry, history, philosophy and sociology. Wine involves art, laws and regulations, mystery and romance. The world of wine and food is a fascinating and captivating world. My proposal and invitation to you is to educate yourself about the intimacy of wine and food, as well as learning more about the complex process that transforms mere grapes into your favorite wine. The answers not only rely on an intellectual explanation and understanding of the matter, but also require a deep exploration within yourself, so that you really connect with your senses. When that happens, you'll be ready to face and explore the world of wine and food with an open, yet critical, mind and with an amazing ability to TASTE the world around you!
